Tasting notes


Appearance: crimson-red.

Nose:

aromas of red fruits (mainly morello cherries) and spices (liquorice, grey pepper).


Palate:

tannins are firm and silky and the wine has a great structure.

Sommelier's advice: game terrine, with red onion pickle.

Grape variety/varieties: Blending of Grenache and Syrah.

Harvest: Harvesting is performed when grapes reach a good maturity.


Soil:

The Côtes-du-Rhône “Pic & Chapoutier” has an extraordinary richness and complexity because of the diversity of the different soils which grapes are coming from (Drôme, Gard, Vaucluse, Ardèche).The different types of soil are composed of clay and calcareous alluvial deposit terraces, clay…


Vinification:

The grapes are entirely destemmed. Vatting lasts around 2 weeks that provides a good tannic structure to the wine, allows its ageing and guarantees a good stability.



Ageing:

The wine is aged in vats. Pumping over allows the wine to be clarified.
